About the origin of our food

Awareness and interest in what we eat has never been greater than it is today. We very much welcome this trend and are happy to inform you about the origin and processing of the food in our restaurants. All gastronomic operations of the east Group rely on ingredients that are as typical of the region as possible and of the best quality when compiling the menu. The seasonal availability of food also plays an important role, and long transport routes are avoided whenever possible. All kitchen teams, kitchen management and purchasing departments work in close exchange with our suppliers and producers to achieve maximum selection, taste and sustainability.

In our own production kitchen, the east manufactory in Sternschanze, basic products such as stocks and sauces are produced in-house in large quantities and delivered to our operations. Centralized production ensures consistent quality, reduces the workload on kitchen teams and minimizes transport distances.

From sea & river

The traditional company Hummer Pedersen in Hamburg supplies us daily with exquisite fresh fish for processing into sushi and sashimi. "All imports are subject to strict selection. Absolute freshness and unique origin promises our partner for meat, fish and vegetables. "Havelland Express" believes in a new awareness of food. Knowledge of the origin of food plays a central role in this. That's why we pay close attention to the origin of our products and follow the principle: the best quality, produced as close as possible."

Vegetables & Fruits

The vegetables and fruits processed in our gastronomic establishments are assembled fresh daily at the Hamburg wholesale market by our supplier C.D. Albers.

Asia specialties

We source the authentic Japanese food for our excellent sushi from SSP Trade & Consult.

The heart of Milk Made ice cream production beats in the middle of Hamburg-Eppendorf.
All natural and lovingly made by hand. In the production of the Milk Made ice cream, the team only uses real natural foods. No flavor enhancers, preservatives or colorings, just real fruit, real vanilla, real milk. Everything genuine, everything naturally delicious.

Italian specialties

We receive our Italian specialties such as fresh truffles, dairy products and high-quality oils from il-sole in Hamburg.

Coffee

We obtain our excellent coffee from the Speicherstadt-based G.C. Breiger & Company GmbH. IkaCoffee's coffee beans are sourced from a cooperative in the Sierra Nevada de Santa Marta region of Colombia.Traditional and regional production as well as supporting sustainable cultivation and ensuring transparency in the value chain are the company's core values.

Fresh baked goods

Braaker Mühle Brot- und Backwaren GmbH lives and stands for regional raw materials, the highest quality of ingredients used and production methods according to all the rules of craftsmanship. The uniqueness of the production is the actively operated windmill. This has been family-owned since 1859 and to this day reliably grinds all the wheat, rye and spelled wholemeal flour required.

Raw milk cheese

Cheese has been produced on our farm with passion and joy since 1991. We maintain traditional craftsmanship and "treat" the milk as little as necessary. We are artisans and we make cheese in a very traditional way. At the same time, we are very open to technology and combine traditional knowledge with analytics and scientific knowledge.
